Four Healthy Traditional Christmas desserts.


With Christmas just around the corner, the last thing you need is the stress of finding something healthy but traditional to add to your dinner menu. Thanks to these Delicious Healthy Christmas treats, you will not only save your waistline, but also, your guests won’t even know they are eating healthy too!

This does not mean however, that you should go overindulge just because they are healthy. Read my article on Conscious eating for this Holiday Season. There are many tips on how to save yourself from over eating this holiday season.


Coconut Egg Nog

3 Cups Coconut Milk
4 Organic Egg Yolks, beaten. Preferably organic or pasture raised
1 1/2 Teaspoon Vanilla Extract
1 teaspoon of freshly grated nutmeg
1/4 cup Maple Syrup (or more, go ahead-it’s delicious!)
Cinnamon (optional)

Coconut Whipped Cream (optional)

Heat the Coconut Milk over low heat. Stir in egg yolks, continuously stirring until thick. Add vanilla extract, nutmeg and maple syrup. Refrigerate until cool, which is up to 3 hours. Pour each individual serving, and add the coconut whip on top. Add a dash of cinnamon and nutmeg on top and ENJOY!


Christmas treat: Gluten Free Ginger Molasses Cookies

1/3 cup packed brown sugar
⅔ cup sugar, plus more for rolling the cookies
¼ cup molasses
1 large egg
¾ cup extra virgin coconut oil
2 cups Gluten Free all purpose flour (I love Cloud 9 from Costco)
2 tsp. baking soda
½ tsp. Real Salt
¼ tsp. ground ginger
2 tsp. allspice
dash of nutmeg

Preheat your oven to 350° Beat the Molasses, white and brown sugar, and large egg until smooth. Use your muscles for the first bit and make it a workout! Add the oil and mix until well blended. In a separate bowl, combine all of the dry ingredients until well combined. Slowly add the bowl of dry ingredients to the bowl of wet ingredients. Make sure it is all evenly blended and smooth. Roll the dough into 2 inch sized balls and roll them in a bit of sugar. Place them on a lined baking sheet, with enough space in between so they do not turn into one giant cookie! I have done this before…

Bake for 12-15 minutes or until golden brown. Remove them and let cool on a metal rack. ENJOY!


Christmas dessert: Delicious Apple Crisp- With maple syrup!

4 cups cored and sliced tart green apples (about 4-5 medium apples)
2 Tablespoons butter. (preferably grass fed) add coconut oil if needed as well.
1 Tablespoon pure maple syrup (the real deal!)
1 tbsp lemon juice
1 teaspoon ground cinnamon (add more to taste)
1/4 teaspoon ground nutmeg or allspice (add more to taste)
2 teaspoons of Arrowroot starch or 1 tsp cornstarch
2 Tbsp of water
2 Tbsp apple juice

Crisp Topping:
1 cup gluten-free old fashioned oats
1/2 cup firmly packed almond flour
1/3 cup brown sugar
1 teaspoon ground cinnamon
1/2 cup chopped pecans, or walnuts. Whatever you are “nuts” for!
4 tbsp unsalted butter, melted. (You can add coconut oil too)
add pure maple syrup to taste
dash of sea salt

Preheat oven to 350°. Place all of the sliced apples into a bowl. Add the lemon juice, water and apple juice. Then the nutmeg, cinnamon and allspice. Pour the the maple syrup and melted butter into the mixture. Finally add the cornstarch until the apples are well coated. Place all of this into a 9×9 inch baking dish, then set aside.

For the Topping:
In a medium sized bowl, mix together all of the dry ingredients. Take the melted butter and coconut oil and bit by bit, start cutting the butter into the mixture. This is best done by hand, you will know it is finished when it is crumbly and well combined. Add the maple syrup at the end, to taste. Finally, top the apples with the crisp topping and put it in the oven!

Bake for 40-45 minutes or until the crisp is crispy. It will probably smell very amazing in your house, so try not to open the oven until it is finished! Serve with coconut Ice cream, or I LOVE it with vanilla goat milk ice cream. ENJOY!


Baked Apples:


4 large good baking apples
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup chopped pecans (optional)
1/4 cup currants or chopped raisins
1 Tbsp butter
3/4 cup boiling water

Preheat your oven to 375°. Take a small pairing knife and cut out the cores of the apples. Making sure to leave the bottom 1/2 inch of the apple intact! Put them into a medium sized baking dish. Place the brown sugar, spices, nuts and raisins in to a bowl and combine. Stuff the apples with that mixture, then add a small dollop of butter on the top. Pour the bowling water at the bottom of the dish with the apples in it. Bake for 30-35 minutes until the apples are cooked but not mushy! ENJOY!
